If you have even numbers of every card you could put a spin on an old classic and play Snap.
How about going on a nature hunt to see how many you can spot in the wild or at a zoo.
Trade with friends, make a collage, use them as part of a project to learn more about that animal - like making a fact file.
The cards make great bookmarks too.
You could probably play a modified version of go fish if you have enough leftovers.
